The blood orange season is small and select and comes round but once a year. I love a blood orange me, as they have such a distinct flavour to any other type of orange and this marmalade is no exception. It is definitely a sweeter marmalade and because of the red undertones in the orange you end up with a wonderful barley sugar kind of colour in the jar! We only put three ingredients in this marmalade and that is fruit, sugar and water. The Best things in life are definitely the best!

For the person who likes a sweeter marmalade! Full of lovely flavours of the orange, lime, lemon and pink grapefruits in equal quantities we put in. We make our marmalade with small cubed pieces of peel which has always been more of a personal choice, however our customers seem to more than approve cause they keep coming back for more!
We make all our marmalade in small batches just like you would at home of no more than a dozen jars at a time. So you are assured of a lovely handmade marmalade. |
I have had this recipe for a number of years and it is one of the few recipes I haven't ended up editing or changing simply because it's perfect to my taste buds.
It has hints of ginger, garlic and ginger but its not spicy hot. My favourite green tomato chutney accompaniment is a lovely big homemade cheese scone with a gurt' chunk of brie or cheddar- Dorset style! These green tomatoes were from the Big Yellow Bus Garden Project not far from us in Shillingstone. A newly developed field for folk to go and spend a few hours gardening for so many different reasons. All the produce they grow is given away locally, it is left out on the neighbouring trailway and cyclists and walkers can help themselves. We didn't want to just take the green tomatoes for free for our business purposes so we agreed we would tithe back a percentage of the green tomato chutney back to them to sell for their charity. |
As the title suggests this chutney has a bit of chilli heat around it, not ridiculous but enough that you get a warm glow! It also has ginger and garlic which creates all those lovely base flavours. This is a chutney that does well to sit for a month before cracking it open as the flavours merge and mellow and the acidity of the vinegar subsides to leave a lovely appley flavour.
Fab with any cheeses or cold meats or in a toastie with some cheddar! |
A surprisingly flavourful textured chutney with pieces of local Dorset pumpkin from the Big Yellow Bus Garden Project. They certainly grew some amazing different and varied pumpkins!
For me pumpkin is a bit like couscous! yes i did just say that! Basically the pumpkin or couscous becomes what you put with it so if you offer either bland flavours, well bland is what you will get! But.... if you throw amazing flavours at it, you will end up with the most wonderful chutney and that is what we have done here and pumpkin offers a lovely chunky texture which is amazing! |
This savoury jelly has rather a special place in my heart for it's my own recipe and as far as i know its unique to me! This jelly when I first started the Thyme after time business some 16 years ago won me a place on the River Cottage shelves in Axminster which made me tremendously proud!
Just prior to this time I had found out Hugh Fearnley Whittinstall was attending a local book signing -so I arrived, i cheekily cut the huge queue and handed him a jar of this jelly and said to him- "you are giving to everyone else today, here's a gift for you!" Hugh was a busy boy that day, he smiled, thanked me and graciously took it. Little did I know just in a few months he was about to open his first flagship shop and canteen in Axminster. To my joy I was invited to visit pre-opening and discuss supplying- which of course i darn well did! Back then of course making preserves was the only thing we did - it's a long story but since then we have opened a cafe not once but twice, never more than one at a 'thyme' though and a catering business evolved of its own accord! What a journey we have walked so far! |
This is one of my all time favourite pickles, made with fresh and delicious locally grown beetroot, sourced from a neighbouring farmer. This pickle has a subtle hint of ginger to it. Our beetroot pickle goes amazingly well with a good ham and cheeses - in particular blue cheeses andas well as a good Wensleydale or Cheshire cheese. I love it on a ploughmans lunch as well.

Oh yeah baby now that's a breakfast worth having! Don't do your toast half heartedly, do it with your all not part of you- I guarantee it will taste every bit as good as you hoped it would. Sharp and sweet is what this jam is all about! Three simple ingredients - Locally grown blackcurrants and Bramley apples and of course sugar- nothing more, nothing less! |

The wonderful cherries from Milborne St Andrew, its always a special time when this season comes in - just ask our staff, they love a bit of cherry stoning! It honestly looks like a terrible crime has taken place in our kitchen when we are head long into stoning cherries- juice everywhere but these cherries are beautifully juicy and we wouldn't want them any other way! Add to that the delicious Black Cow vodka and this jam raises its sights higher than they were in anyway. I love a pot of Dorset in a jar and this one most defo is! |
